ALL TYPE PASTA

zucchini pasta with feta cheese[recipe]

 

Ingredients:
  • 2 cups ................. pasta
  • 1 medium sized .... zucchini
  • 1 cup ................... cherry tomatoes
  • 3-4 large .............. red chilies
  • 1/4 cup ................ walnuts
  • 2 tbsp .................. olive oil
  • 1 tsp .................... dried oregano
  • 7-8 cloves ............ garlic
  • 8-10 small cubes ...feta cheese
  • lemon juice to taste
  • salt and pepper to taste
Method:
  • In a large pot, boil enough water and add the pasta.
  • While the pasta is cooking, prepare the ingredients. Dice the zucchini into small cubes. Cut the cherry tomatoes into halves. Chop the red chilies and walnuts. Set aside.
  • In a pan, heat the oil. Crush the garlic and add it to the pan. Saute on low heat for couple of minutes.
  • Increase the heat to high and add the red chilies and zucchini. Cook till the zucchini is nice and soft.
  •  Add salt, pepper and oregano. Mix well.
  • Add half of the cherry tomatoes and walnuts. Mix well and cook for 5 minutes.
  • Turn the heat off and add some lemon juice. Add remaining cherry tomatoes.
  • Crumble the feta cheese and add it to the mix.
  • Your pasta should be ready by now. Drain the water and add the pasta to the sauce and mix well.
  • Ready to serve

    pasta with tomato sauce 

    A basic pasta sauce recipe. Enjoy.


    Ingredients:
    1 medium onion, chopped finely
    3 tbsp olive oil
    2 tsp garlic paste
    1 tsp of dried basil leaves
    1 tsp oregano
    1 cup of pureed tomato ( blanch the tomatoes, remove the skin and blend it)
    salt to taste
    pepper powder to taste
    2 tsp tomato sauce ( ketchup )
    1 small capsicum ( chopped finely and crushed )
    1 cup penne pasta
    Shredded cheese to taste
    Cherry tomatoes to garnish

    Method:
    • Boil the pasta in enough water along with salt and few drops of oil.
    • Once the pasta is cooked, drain the water and set it aside.
    • In a pan, take the oil and add the chopped onion. Cook for 2 minutes
    • Add the garlic paste and crushed capsicum.
    • Add the basil leaves and oregano. Cook for 5 minutes.
    • Now add the tomato puree and tomato sauce. Mix well.
    • Cover the pan with a lid and cook on low heat for 10 minutes.
    • Remove the lid and add salt and pepper.
    • In a serving bowl, put the pasta and pour the sauce over it.
    • Garnish with shredded cheese and cherry tomatoes.
    • Ready to serve
    Serving Suggestions:
    Can be served as a meal or as a snack.

    pasta primavera


    An incredibly easy and tasty pasta dish with lots of veggies. My twist is to make it with fresh spring onions which give this classic dish a unique flavor.


    Ingredients:
    1 cup pasta ( fusili preferred )
    1 bunch of spring onions, chopped finely
    1/4 cup fresh corn kernels
    1/2 cup capsicum, chopped finely
    1/2 cup other chopped vegetables ( carrot, brocolli etc. )
    1/2 cup cream
    1 tbsp ginger garlic paste
    1 tsp chilli flakes
    shredded cheese ( parmesan preferred, but any other cheese will do )
    seasoning ( basil, oregano etc. )
    2 tbsp olive oil
    salt to taste

    Method:
    • Take enough water in a large vessel. Add a little salt and olive oil. Bring the water to a boil and add the pasta.
    • Cook till the pasta is tender. Keep 1 cup of remaining water aside. Drain the pasta and keep it aside.
    • In a pan, add olive oil and heat it. Add ginger-garlic paste and cook for a minute. Add the spring onions and saute for 2-3 minutes.
    • Add all the vegetables along with salt and chilli flakes. Cover the pan and cook on low heat till all vegetables are done.
    • Add the pasta water you had set aside along with the cream. Mix well.
    • Add the seasoning of your choice and mix well.
    • Turn off the heat and add the cheese.
    • Ready to serve
    Serving Suggestions:
    • Serve as a snack, starter or even a meal.

      macroni with spanich balls

    •  
      ( Macroni in red sauce with Spinach Balls and mexican herbs )
      Ingredients:
      For spinach balls:
      1 bunch spinach
      1 cube cheese/paneer
      6 tsp maida
      1/2 green chili, finely cut
      pinch of soda
      salt to taste
      For red sauce:
      2 cup macroni
      5 medium sized tomatoes, boiled and pureed
      1 onion, finely chopped
      1 capsicum, finaly chopped
      1 tbsp garlic paste
      1 tsp chilli flakes
      1 tsp oregano/italian seasoning
      1/2 tsp sugar
      salt to taste

      Method:

      For spinach balls:
      • Steam the spinach for 5 minutes without water
      • Cut it into small pieces and mix with cheese,green chilli, maida and salt
      • Take a little water into your palm and roll the mixture into small round balls
      • Steam these spinach balls for 10 minutes ( as shown in the picture ) and set aside.

      For red gravy:
      • Take water in a bowl and bring it to a boil. Add a little salt and oil. Add the macroni and cook till its tender. Drain and set aside
      • In a pan, take a little oil, add onion and cook till it turns brown.
      • Add garlic paste, capsicum and the spices. Cook for 2 minutes
      • Add the tomato puree, sugar,salt and half cup of water.
      • Cook with the lid covered for 10 minutes.
      • Add the spinach balls and macroni. Mix well.
      • Garnish with cheese and chili flakes.
      Serving Suggestions:
      Serve with Garlic bread

      Tip:To puree the tomatoes, first slit the tomatoes as show in the picture. Boil these for 5 minutes. Peel the skin and blend it. Slitting the tomatoes before boiling makes it easy to peel the skin once the tomatoes are boiled.

 

 

 

 

 

 

 

 tangy macaroni 



Ingredients:
1 cup macaroni boiled
1 small onion
2 big tomato (pureed)
2 tsp tomato sauce
1 tsp ginger paste
1 tsp garlic paste
1 tsp black pepper
4 or 5 cut pieces of jalapenos
1/2 cup shredded cheese
salt to taste
Olive oil to cook
1/2 tsp oregano

Method:
  • Boil the macaroni and keep aside
  • Heat olive oil in a kadai
  • Add ginger garlic paste and onion
  • When the onion is little brown,add cut green chilies, tomato puree and tomato sauce
  • Put black pepper powder, jalapenos ,oregano and salt to taste
  • Add boiled macaroni and cook it for a while
  • once done garnish with cheese
  • serve hot


Serving Suggestions:
serve with garlic bread
