SOUPS

GRILLED TOMATO AND CORIANDER SOUP

Ingredients:

  • 4 ............... medium sized tomatoes
  • 1 ............... small bunch coriander leaves
  • 2 tsp .......... cream
  • 1 tsp .......... pepper powder
  • 1 tsp .......... butter
  • 2 tsp .......... olive oil
  • 1/2 ............. tsp sugar
  • salt to taste
Method:
  • Cut the tomatoes into quarters and lay on a baking tray. Sprinkle olive oil, salt, 1/2 tsp pepper and chopped coriander leaves. Give it a shake. Grill on a pre-heated oven at 150 °C for about 40 minutes.
  • Take them out of the oven and let them cool. Add 1/2 cup water and blend them. 
  • Heat butter in a pan. Add the blended tomatoes, salt, 1/2 tsp pepper powder ,sugar and mix well.
  • Cook for 4-5 minutes on low heat.
  • Turn off the heat and add the cream. Mix well.
  • Top with chopped coriander leaves and serve hot.

Corn Capsicum Soup (Corn and Bell Pepper Soup) [RECIPE]

This spicy hot soup will be sure to pump you up after a long day or on a cold afternoon. Enjoy!





Ingredients:

⅓ cup         ........... corn
⅓ cup         ........... capsicum (bell pepper)
2 tsp           ........... red chili sauce (hot sauce)
2 tsp           ........... soya sauce
2 tsp           ........... oil
1 tsp           ........... ginger garlic paste
2 tsp           ........... corn flour
1 tsp           ........... pepper powder
½                ........... lemon
salt to taste

Method:

  • Take a wok or a deep pan. Add the oil and wait till it is hot.
  • Add the ginger garlic paste, capsicum and corn. Mix well.
  • Add red chili sauce and soya sauce. Mix well and saute for 5 minutes on high flame.
  • Add about one and a half cup water,  pepper powder and salt. Squeeze the lemon into the mix.
  • Take a small bowl and mix together the corn flour with some cold water. Mix well and add it to the soup. This way you can avoid lumps in the soup.
  • Cook on medium flame for about 10 minutes. 
  • Adjust the seasoning and serve hot!
