GRILLED TOMATO AND CORIANDER SOUP
Ingredients:- 4 ............... medium sized tomatoes
- 1 ............... small bunch coriander leaves
- 2 tsp .......... cream
- 1 tsp .......... pepper powder
- 1 tsp .......... butter
- 2 tsp .......... olive oil
- 1/2 ............. tsp sugar
- salt to taste
Method:
- Cut the tomatoes into quarters and lay on a baking tray. Sprinkle olive oil, salt, 1/2 tsp pepper and chopped coriander leaves. Give it a shake. Grill on a pre-heated oven at 150 °C for about 40 minutes.
- Take them out of the oven and let them cool. Add 1/2 cup water and blend them.
- Heat butter in a pan. Add the blended tomatoes, salt, 1/2 tsp pepper powder ,sugar and mix well.
- Cook for 4-5 minutes on low heat.
- Turn off the heat and add the cream. Mix well.
- Top with chopped coriander leaves and serve hot.
Corn Capsicum Soup (Corn and Bell Pepper Soup) [RECIPE]

Ingredients:
⅓ cup ........... corn
⅓ cup ........... capsicum (bell pepper)
2 tsp ........... red chili sauce (hot sauce)
2 tsp ........... soya sauce
2 tsp ........... oil
1 tsp ........... ginger garlic paste
2 tsp ........... corn flour
1 tsp ........... pepper powder
½ ........... lemon
salt to taste
Method:
- Take a wok or a deep pan. Add the oil and wait till it is hot.
- Add the ginger garlic paste, capsicum and corn. Mix well.
- Add red chili sauce and soya sauce. Mix well and saute for 5 minutes on high flame.
- Add about one and a half cup water, pepper powder and salt. Squeeze the lemon into the mix.
- Take a small bowl and mix together the corn flour with some cold water. Mix well and add it to the soup. This way you can avoid lumps in the soup.
- Cook on medium flame for about 10 minutes.
- Adjust the seasoning and serve hot!
